Fit for a Goddess: Crazy Delicious ‘Gimme More’ Minestrone Soup

This Crazy Delicious ‘Gimme More’ Minestrone Soup is fit for a Goddess and thinfully delicious.

The idea? Be creative and use what you have in your kitchen for dinner.

I looked through my fridge and realized I had nearly all the fixings for a creative minestrone soup (i.e. minestrone soup… my way). I threw this soup together, chopping included, in under 30 minutes. Delicious & nutritious food doesn’t have to take a long time and you don’t need to make that extra trip to the grocery store for missing ingredients. Learn to work with what you have!

When you do go grocery shopping… remember this: VEGGIES, VEGGIES, VEGGIES! Your body will thank you.

    Mmmmminestrone! It’s also a great way to use up the carrots, onions and celery before they wilt. I keep a can of cannelini beans in the cupboard just in case I get a yen.

    My favorite fast minestrone:
    Saute diced carrots, celery, garlic and onions in olive oil until they soften. Add small can of diced tomatoes and a quart of veggie or chicken broth. Simmer for 15 minutes. Add a drained and rinsed can of cannelini beans, salt and pepper and simmer for another five minutes. Serve with a spoonful of pasta and grated parmesan-reggiano cheese. If you want to be wicked, float a teaspoon of extra virgin olive oil on top.

  2. I’m always up for simple, easy and healthy! And it’s nice to know that the “recipe” is flexible, matching whatever ingredients happen to be on hand. What is the vegetable broth that you used?

    @GlobalPatriot- I bought it from the bulk food section at Henry’s, it’s just a low sodium veggie broth. Of course, making it by hand is so much better but time is short and I’m lazy.

    @Betty- If only I had celery and garlic… but the recipe turned out surprisingly delicious. Not bad for “what’s in my kitchen.” Next time I’ll try the recipe as it would be chez Betty! Yummy!
